Another delicious Taco Tuesday at the casa.  These Crunchy Beef Tacos were awesome.  Far better than any Mexican restaurant in Hawaii.  Love using Ala Madre Low Carb Corn Tortillas.

I am a Certified Tacoholic. The problem is however you cannot get good Tacos in Hawaii so I am forced to make them at home.  I'll put these Crunchy Beef Tacos up against any in Hawaii and they are especially great because they are low carb using Ala Madre Low Carb Corn Tortillas.  We do both Ground Beef and Shredded Beef Tacos at home.  I like both but a good Shredded Beef is really the way to go.

Taco Tuesday at the casa and I made Baked Crunchy Beef Tacos.  Nice not to have to heat oil and deal with the mess and cleanup.  Used low carb Corn Tortillas too!

When visiting our Kona warehouse, I like to enjoy some Mexican food from Patricio's which is not far from the office.  I like the Crunchy Beef Tacos with lots of their hot sauce.  The sauce is HOT and I mean really hot.  Tasty...hot and addicting.  The Tacos are a bit small but three come with the order.  Recommend you eat them at the restaurant or quickly after delivery and they can get mushy and lose their crunch.

Loved our Japan trip and all the food but the thought of a Crunchy Taco was always in the back of my head.  Got back to Hawaii and just had to enjoy my fave Crunchy Beef Tacos with Guacamole.  Low carb tortillas of course!

One of my all time favorite dinners are these Crunchy Beef Tacos with Guacamole. 

 Low Carb Corn Tortillas and baked in the oven.  Delicious!

Loving my Beef Tacos baked in the oven.  Completely eliminates frying the Tortillas in oil and the flavor and crunch are perfect.  I use Ala Madre Low Carb Corn Tortillas and heat them a bit to make them plyable.  Spray a little Olive Oil on both sides of the Tortilla.  Place cheese in the middle and fold.  Bake at 425 degrees until crispy.  Remove from oven and fill with Taco Beef, Lettuce, Cheese, Guacamole, Pico de Gallo and Hot Sauce.  One of my favorite meals in the world!

Lunch at Patricio's in Kona was excellent.  Loved the Crunchy Beef Tacos and Carne Asada Taco.  The Hot Salsa packed some heat which I liked.  The Guacamole here is also excellent.  Didn't think the Crunchy Tacos with Ground Beef would be good as I prefer Shredded Beef which they do not offer.  Ground Beef was really good.  The Crunchy Tacos could use some cheese though.  Beans and Rice were pretty good too.

Changed up Taco Night by trying a Baked version of my Crunchy Beef Tacos.  Came out nice and crispy and bursting with flavor.  Definitely will cook this way again!

LETS MAKE FRESH SALSA

GROUND BEEF WITH ONIONS, JALAPENO AND TACO SEASONING

WARMED TORTILLAS FIRST TO MAKE THEM PLIABLE.  SPRAY WITH COOKING
OIL AND TOP WITH CHEESE.

ADD COOKED BEEF

FOLD TACO STYLE

BAKE AT 450 DEGREES FOR 10-12 MINUTES.  REMOVE AND FILL WITH LETTUCE, MORE CHEESE, PICO DE GALLO AND HOT SAUCE

I was waiting for a prescription to be filled at Longs and found Taco Bell Taco Shells on sale.  Remembered that we had leftover Taco meat so I bought some.  Right out of the box these shells tasted stale and some were broken.  Only good thing is that you don't have to break out the oil and fry tortillas to make quick Tacos.
