No complaints about Federico's on the Island of Kauai. Good - Fresh Mexican food as advertised.
Order up at the counter and then sit on the outdoor patio. They will bring the food out to you and it comes quite fast. I had the Beef Tostadas. They were huge and topped with Ground Beef, Refried Beans, Mexican Rice, Lettuce, Cheese and Salsa. Comes with a healthy scoop of Sour Cream and Avocado on the side too. One was more than enough to fill me up. The Tostadas were heavy though and the shells broke into pieces so grab a fork. Everyone seemed to like the food here. The Burritos were large, tasty and filling my Daughter said. Our friend who enjoyed a Fish Taco and Carne Asada Taco was very happy. The Ceviche and Shrimp Ceviche Tostadas got a so so review from my Wife.

CHICKEN SALAD WITH RAINBOW PASTA
DINNER AT HOME
Once again I had to finish off one of the Costco Rotisserie Chickens so I removed all of the Chicken off the bones and diced it all up in small pieces. Added chopped carrots, red onion, celery, jalapeño
and a little mayo and relish to make a delicious Chicken Salad. Placed over chilled Pasta with a little bit of Italian Dressing. Topped with American Cheese and Sun Dried Tomatoes.

DINNER AT HOME
When I saw fresh Hawaiian Swordfish at the market for around $5 per pound, I grabbed a few fillets for the family dinner. When I can put a restaurant quality meal on the table for three for under $15 it makes me happy. This meal would cost at least $30 for each plate in a Hawaii restaurant. Super fresh fish and a good sauce are the keys here. I make my cream sauce with garlic, shallots, mushrooms, butter, olive oil, white wine and cream. Sauce the garlic and shallots in a combination of olive oil and butter. When cooked add the mushrooms and cook until tender. Deglaze the pan with about a 1/4 cup of white wine and reduce until alcohol cooks off. Add a few tablespoons of butter and cream plus salt/pepper. So easy and so delicious!!! Don't overcook the fish. I grill to sear both sides and then pop in the oven at 350 degrees for around 10 minutes.

For some reason I was driving home one evening and was craving Tuna Fish. Got home and found that we had all the ingredients to make some delicious Tuna Lettuce Wraps. I use my go to recipe for Tuna and it always comes out delicious. Click link below for the World's Greatest Tuna Sandwich Recipe;

Blessed to have a very rare lunch with my Daughter on a weekday during summer. Somehow I have missed these times for so many years. While it did feel odd, I cherished each minute of this lunch and want many more before she goes off to college. My Daughter went for the Pancakes with Strawberries and Bananas with a side of bacon while I went for the Turkey Club. She loved the Pancakes and I loved the Club so this was a good meal with good service. Like this little place in Market City and wish I had time during the day to go here more often.

I cooked up some delicious Chicken Soup using what was left from a Costco Rotisserie Chicken, fresh vegetables, peas and corn that we had in the fridge. Paired the soup with a Philly Cheese Steak that we also picked up at Costco. My Daughter loved this meal and now is addicted to the Cheese Steaks.
