GREEK SALAD WITH ROTISSERIE CHICKEN

LUNCH AT HOME

My Wife made a delicious Greek Salad and I kicked it up a notch by adding some Rotisserie Chicken. Delicious, light, filling and satisfying lunch. And to think I almost went to Taco Bell where I would have loaded up on carbs. Glad I sticked to my low carb plan!

SEARED SCALLOPS WITH CRAB AND TRUFFLE RISOTTO

DINNER AT HOME

Went from a dinner menu of Drew Burgers Protein Style to a seafood extravaganza when I went to the market and found fresh Clams and Scallops looking so good in the display case. Started with some delicious Steamed Clams with Sausage in a White Wine, Butter and Garlic sauce. Made Crab and Truffle Risotto with Scallops using leftover Alaskan King Crab.

This restaurant quality dinner was made even better by being at home on our lanai.

Went to the market to pick up Lettuce to make Drew Burgers Protein Style and decided to check the fresh fish section. Saw a nice package of Manila Clams and changed our dinner menu on the spot. Made Steamed Clams with Sausage in a White Wine, Butter and Garlic Sauce. As good as any restaurant in Hawaii.

Love the Harbor House in Kona. This is one of my favorite places for lunch and a cold beverage. The Fresh Fish Sandwich is one of the best in Hawaii.

Another perfect, delicious and very satisfying dinner at Arancino at The Kahala. The Ebe with Caviar is my favorite appetizer. Chilled raw Kauai Prawns covered in Caviar. I savor and love each bite of this. Once again, I went with the Carbonara. Hands down the best Carbonara in Hawaii. Worth the carbs and I finished the entire bowl. My friend enjoyed the Mushroom Risotto which is mixed in a wheel of Parmesan table side. Love this place!

TACO STUFFED AVOCADO

Love spending some time at the Sony Open at Waialae Country Club. Always good to get out and see the golf, catch up with old friends and make new friends. Met Nick Lachey from 98 degrees and he was incredibly gracious and humble. Jerry Tillery from the Oakland Raiders was a true gentlemen and 100% class act. This man came from poverty and then went on to play football for Notre Dame, San Diego Chargers and Oakland Raiders. He is genuine and a super gentle giant who I immediatly liked. Had to get a chair to talk to him at his level.

Crazy but in all my years going to Nico's, this is the first time ever having dinner here. I didn't know the place had dinner service where waiters take your order. I am used to the lunch service where you order at the counter and then pick up your food. Our waiter was fantastic and the appetizers and entrees came out in what seemed like record time. I loved the Soft Shell Crab Bao Buns with Lettuce and Tomato. Really good but the Bao Bun really fills me up. Didn't get why they call the Ahi Dip "angry". Didn't seem to have a lot of flavor or heat. Thought the Poke was a bit bland. Calamari was perfect. Everyone loved the Steamed Clams. The Orange Chicken packed a bunch of flavor and could be addicting. For the entrees, I went with the Swordfish with Truffle Butter Sauce. The fish was a bit overcooked and dry. The Truffle Butter Sauce was thick like gravy and did not have a lot of Truffle flavor. The Swordfish with Peppercorn Sauce was better. The Ama Ebe was a hit with the Shrimp being sweet. Ended the meal with five desserts and believe me, I tried them all. All were good especially the Cheese Cake, Carrot Cake and Chocolate Cake. I liked the outdoor seating which is dog friendly here. Nice to sit outside and enjoy the great weather.
