We had Shrimp Taquitos at King's Fish House in San Jose.  They were so good that I decided to make our own at home.  My Wife actually pulled this off using low carb Corn Tortillas.  These were amazing good.  As good or better than the King's Fish House version.  Definitely making these again!

Readers of my blog know that I am a certified Tacoholic.  Could eat Tacos every single day if they are good.  Raul's Shack has some of the best Crunchy Tacos on the planet.  Every trip to San Diego, we eat here one or two times.  Always get the Crunchy Shredded Beef Tacos.  On this visit we also enjoyed the Beef Taquitos and a huge Chicken Tostada.  Prices here are super cheap compared to Hawaii Mexican food.  I posted just a portion of the menu so you can see the prices.  This is a Great Eats Hawaii FAVORITE!

Our Taco Tuesday was a Taquito Tuesday with homemade Shredded Beef and Chicken Taquitos.  We made the Shredded Beef a few weeks ago and froze it.  The Shredded Chicken was made fresh using Chicken Breasts that I seasoned, grilled and shredded.  Then added it to some sautéed onion, bell pepper, garlic, spices and diced Mexican Tomatoes with Habanero Peppers.  Layered Avocado Salsa, Hot Sauce, Lettuce, Cheese and Pico de Gallo on top.  The Taquitos were as good or better than any restaurant we have been to in Hawaii or California.  In fact I think my Chicken Taquitos are as good as any I have ever tasted.  Love them!

Made Shredded Beef for Tacos and just had to make some Taquitos too.  Topped the Taquitos with fresh homemade Guacamole, Salsa, Lettuce, Cheese, Pico de Gallo and Queso Fresca.  So darn good that I am looking at the photo and wanting these for breakfast!

I am done looking for good Tacos in Hawaii.  This time we made our own and invited around 10 people over for Taco Night.  Dozens and dozens of tacos were consumed.  One guest finished 11 by the evenings end.  Two people finished 8 Tacos each.  Our Tacos are made with slowly cooked Shredded Chicken and Beef that takes hours to prepare and cook.  We use a variety of chili's and spices to create flavorful meats that fill our tacos with flavor.  Our tacos have a freshly fried corn tortilla shells that adds a nice crunch.  Add our homemade salsas and you have some really good tacos.  Also made Carne Asada Street Tacos that take me back to my days hanging out in Tijuana and Rosarito Mexico.
