KOREAN FIRE NOODLES

LUNCH AT HOME

My Daughter saw a YouTube video of a young guy eating mounds of these hot and spicy noodles.

She just had to make us try them. Holy shit these are spicy hot. They burn your lips and go down flaming. Problem is they are really good noodles with a nice taste so you want to keep eating them even though your face is on fire. These are the real deal if you like spicy noodles!

UPDATE: My friend who is a Chef and loves these noodles saw my post and told me to add melted Mozzarella Cheese. I did and it was even better and the cheese cut the heat just a bit.

Woke up and saw we had an Avocado that was very ripe and ready to use so I made Avocado Toast.

Topped Red Onion, Tomato, Everything on a Bagel Seasoning and an Egg. Delicious!

DINNER AT HOME

Enjoying our family time in quarantine and especially great dinners on our lanai. My Daughter has been craving Sushi so we did the Doraku via Bite Squad again. Food arrived on time and was packaged well so it looked almost as good as the restaurant. We re-plated the dishes using our plates rather than put out the plastic that they came in. Looked and tasted great. Just so nice to be at home, eating great food and being with family. These are slices in time and life that I savor and never want to forget. I love being home and with my girls. Love the Hamachi Kama too!

This is probably one of our families favorite dinners. Baked Salmon with Hollandaise Sauce, Asparagus and Rice. Everything goes so well together and the sauce is delicious on the Salmon, Asparagus and Rice. Never anything left on the plate with this meal. Delicious!

LUNCH AT THE OFFICE

Another week of COVID-19 lockdown and another week I am buying lunch for my entire office to support local restaurants. This is the fifth lunch for my employees and I was happy to buy them from Popeye's Louisiana Kitchen. Popeye's and their local owner Sean Uezu has been a supporter of my Cooling Cancer Golf Tournament since its inception 8 years ago. They always come through and serve hundreds of Chicken n' Slaw Sliders at the tournament and I am grateful for their support.

Nice to give back during these trying times for restaurants and small business. Lunch was really good with a Three Piece Meal with Red Beans and Rice, Cole Slaw and Biscuit. Ordered half spicy and half regular. Red Beans and Rice with Hot Sauce and the Biscuit with Strawberry Jam my new Popeye's favorites!

Shirley made this tasty Chicken Long Rice which my Daughter loves. Glass Noodles, Chicken, Cabbage and lots of Ginger plus some other goodies.

EASTER PRIME RIB DINNER

DINNER AT HOME

What a blessing to enjoy this incredible dinner at home with my girls. While we usually have a small party with friends and family for Easter, this year we limited it to the three of us because of the COVID-19 epidemic. My Wife cooked up everything except for the Deviled Eggs which is my specialty. Cooked two Prime Ribs and delivered one of them to my Wife's family who lives in Honolulu. We started the meal with Croque Monsieur in Puff Pastry with Black Forest Ham and Gruyere Cheese. These are so good that it is difficult not to want to fill up on them. They are so light but filled with a ton of flavor. Next up were my Deviled Eggs which I make with shallots, mustard, relish, hot sauce and a few other secrets. Topped them with a little Paprika and a piece of Bacon.

I could eat all of these myself. The Au Gratin Potaotes with Onions and Prosciutto and I don't know how many kinds of cheese is so good its like eating candy. The crunchy cheese top make these the best potatoes ever. The Horseradish and Herb Crusted Prime Rib was better than most restaurants and made this dinner one to remember. After eating all three of us said this was one of our favorite meals and we gave thanks for this time with family and great food.

CHILI WITH BEEF, CHEESE, ONIONS AND SOUR CREAM

I have been craving Chili since I saw an Instagram post of a local chef making it last week.

Since we are in lockdown, I decided to make homemade Chili for lunch. Simple recipe that anyone can whip up in about an hour. Flavor was fantastic. We did not have any Kidney Beans so this is a beanless Chili. Loved it!
