Blessed to be able to have friends Rich Miano, Greg Salas and Kanoa Leahey join Keli in filming a new Fujitsu television commercial. We filmed the spot in my library which is filled with a lot of University of Hawaii sports memorabilia which is fitting since Kanoa is "The Voice" of Hawaii sports and Rich and Greg were superstars on the Hawaii football team. Rich went on to play 11 seasons in the NFL with the Jets, Eagles and Falcons. Greg was drafted into the NFL in 2011 and played for the Rams, Patriots, Eagles, Jets, Lions and Bills. Incredible athletes and human beings who I am grateful to know and play a little golf with from time to time. Me, Greg and Robby Toma are renowned for taking down Miano and his team in a dog eat dog golf classic at Turtle Bay. Filming the commercial was a blast with some nice outtakes and bloopers. My sincere thanks to Greg Davis at KHON2 who directed and produced the spot. Greg is great to work with and always gets our message across with style. He is a true television professional who takes great pride in his work and knows his stuff. This spot was designed to promote the Fujitsu warranty and it was written by Kanoa Leahey, myself, Rich and Greg. The original script was longer but we really had to cut it down to make the .30 seconds for tv. I think it came out great and thank everyone who was involved with making this happen.

I LOVE good Shredded Beef Crunchy Tacos and there is no better place that makes them in Honolulu then my house. Our Shredded Beef takes hours to make so we freeze some so we can enjoy tacos when we get the urge. Then we serve it up with fresh made Salsa and Pico de Gallo. One of my favorite meals of all time!

FRESH PICO DE GALLO AND HOMEMADE SALSA FOR THE TACOS
This homemade Spaghetti Carbonara was so good. Like being back in Tuscany where we learned to make it from a Michelin Star Italian Chef. The ingredients are simple. Pancetta, Eggs, Pecorino Cheese, Pasta and Pepper. Added a little Italian Parsley and Basil for color. This was really delicious and a taste of Italy in Hawaii. If a restaurant ever serves you Carbonara with Cream, send it back and never go back there again. This is the Italian way and the correct way to make Carbonara.

Visiting Waikiki and seeing all the hotels, restaurants and shops closed is pretty sad. The place was like a ghost town with very few people on the streets. The beaches are closed and many businesses along Kalakaua Avenue are boarded up. Tears my heart out to see once thriving small businesses closed or barely making it. Ramen Nakamura where there is usually a line to get in to sit in one of the less than twenty seats was empty except for us and another family seated across the counter. I ordered the Spicy Ramen which I think is one of the best bowls of Ramen in Honolulu. Great flavor and spice. My Wife got the Oxtail Ramen and she absolutely loved it. My Daughter loved the Shoyu Ramen. You cannot go wrong here. The service is always good and the Ramen Rocks!
Loving our Mini New York Bagels. They are the perfect size to make small sandwiches. This breakfast sandwich with Bacon, Lettuce, Tomato, Egg and Cream Cheese was the bomb!
Another restaurant quality meal at home for around $10 for two. This super fresh Marlin was delicious. Served with Papaya Salsa and a White Wine, Shallot and Garlic Cream Sauce.
The Caviar we received has about a month shelf life so I am happily using it up. Made Bagels with Cream Cheese with Caviar and Bagels with Avocado, Tomato, Onion and Caviar. Oh the Avocado with Caviar was amazing. Wish I had a nice cold glass of champagne with this breakfast.
Made this dinner up on the fly using leftovers and things we had in the refrigerator. For my Tower, I started with Avocado and then added Tuna Salad. Topped with Tomatoes, Red Onion, Cilantro and Lime. Served with Romaine Lettuce, Grilled Asparagus, Egg and Papaya. Pretty darn delicious!

Made a quick Salad using up items we had in the refrigerator. Also had a few Pepperoni Pizzas that we flew in from Carlo's Pizza in Atlanta. I added Onion and Jalapeño to the pizza before cooking and it provided flavor and heat which I like. Simple dinners like this make me happy especially when the entire family is together on the lanai.

This Cornish Game Hen recipe is one of my favorite meals. My Wife marinates the Hens in Olive Oil, Garlic and Rosemary and then we cook them on the grill. Always moist and oh so flavorful.
The serving shown here is half of one of the Hens. We pick them up at Costco for $16 for a package of six. That is a bargain!
