SNACKING AT HOME

My Daughter found these new snacks that are Grilled Seaweed Rolls. We bought the Spicy flavor and damn these are good. Fat free and only 10 calories per piece and tons of flavor and spice.

The heat is addicting. So much in fact that my Daughter ate the entire box. I took a bite and wanted more and more...and more. These were on sale at Longs Drugs in Hawaii for $2.29 per box. Liked them so much we went and bought all they had left which was around 15 boxes. Oh boy...just tried the Tom Yum Goong and Kimchi flavors. They are great. The Spicy Grilled Squid flavor was good but not as good as the Tom Yum Goong. We all love these!

Every week since we have been living with the COVID-19 lockdown I buy lunch for all 30 of my employees to support local restaurants. This was my eighth week doing this and I went with our local Ruby Tuesday franchise because it is owned by friends Rick Nakashima and Ted Davenport. Rick and Ted do a lot for our community and they also have been there to help me with my Cooling Cancer Golf tournament. Rick and his chef came up with a special lunch for us and it was great. Roast Pork with Mashed Potatoes and Gravy, Corn, Mac Salad and a Caesar Salad. Damn this was good and the portions were huge. Please support your local restaurants and small businesses that are so vital to our communities.

Last year we had a great Cinco de Mayo party with around ten friends coming over for Fish, Steak, Shredded Beef and Chicken Tacos. We had Margaritas, lots of beer and a really good time. This year because of COVID-19 we downsized to just Shredded Beef and Shrimp Tempura Tacos for just the three of us. A very mellow celebration but the tacos were amazing!

Up until this day, the only thing I have ever eaten at Bob's BBQ is the Chicken. My office workers were going for the Ribs so I said grab me some too. The Ribs arrived and the container must have weighed 4-5 pounds. I mean it was heavy. Inside were three huge Ribs with large bones and rice. Came with a side of Cole Slaw too. I could only eat one Rib and the Cole Slaw and that was it. I was full. I liked the Ribs and the sauce. For $15 this is enough for my family of three.

Our entire family loves simple BBQ Chicken. Breasts, Legs or Thighs it doesn't matter. On this night I put Boneless Skinless Chicken Breasts on the grill and lathered them in BBQ sauce. Served with Garlic Mashed Potatoes and Vegetables. Fast and easy dinner that is very satisfying and delicious.

My Wife hit it out of the park with this Garlic Ahi dinner. Absolutely the best Garlic Ahi I have ever eaten. Cooked to a perfect pink medium rare and full of garlic flavor. I loved this so much!

My Wife made these incredible Pork Gyoza's from scratch. They were some of the best Gyoza I have ever eaten. So good that they did not last long as my Daughter and myself devoured them. Next time she makes these I will post the recipe.

Back to our Baretta Italian Meats for what is now one of my favorite sandwiches. My Italian sandwich is loaded with meats, lettuce, tomato, onion, cheese avocado, Dijon mustard, Italian Dressing and a bit of Oregano. Love serving these on mini Hawaiian Bread buns. Once again I went to our Air Fryer and made homemade Fries with a little Cajun kick.

My gals love my Fried Rice. I asked them what they want for breakfast and both said Fried Rice. I wake up early and make this before they rise. Kind of nice being in the kitchen on a weekend morning as I usually leave the house by 3:30 am every work day. This batch of Fried Rice came out perfect. BEEN IN THE REFRIGERATOR OVERNIGHT. ADD OYSTER SAUCE AND SOY SAUCE TO TASTE.

Picked up some beautiful and delicious fresh Marlin for $4.99 per pound. Simply grilled it and served with a White Wine, Butter and Caper Sauce that was the bomb. This restaurant quality dinner is not only great tasting but also very inexpensive and healthy. Entire family loves this. For the sauce, saute some shallots and garlic in olive oil. Add White Wine and reduce. Add Chicken Stock and reduce. Add Cream and then butter and capers. Capers provide the salt but you can add to taste.

Our entire family loves Sashimi. So lucky to live in Hawaii where it is popular and abundant. The COVID-19 virus has closed all of our restaurants so there is a large supply of fresh fish in the markets. This block of Ahi was only $10. Sliced it thin and served with Soy Sauce and Wasabi mixture along with fresh Avocado. Yummy!!!!

These have become a family favorite since we discovered how to make them about a year ago.

Only takes a few minutes and so delicious. I use warm Corn Tortillas, Cabbage, Cheddar Cheese, Pica de Gallo, Avocado, Hot Sauce and a White Sauce made with Mayo, Yogurt and Lime Juice.

Every week since this COVID-19 lockdown, I have bought lunch for my entire office to support local restaurants. The Mad Bene in Kapolei was my 7th restaurant. I chose Mad Bene because the owner Jin Hong has supported my Cooling Cancer Golf Tournament since its inception. Always there with great food, drinks and music and one of the most popular holes of the tournament. I was so happy to spend money at Mad Bene and feel blessed to be able to do this. On the menu for the office was a fresh garden salad with local greens and a tasty vinaigrette. The Rigatoni Bolognese with Sausage and Beef was delicious. Portions look small in the little boxes but they were actually good sized.

My office said they were ordering from Tanaka Saimin so I said get me a Saimin. They brought me this lunch which included Saimin, Salad, Shrimp Tempura and Teriyaki Beef. Total cost with fees was $19. The price upset me and so did the food. This Saimin sucks. I hate it. First of all the salad dressing is terrible. Taste like mayonnaise. The Shrimp Tempura is a giant pile of fried batter with no taste. There was a shrimp in there somewhere I think. The Saimin noodles suck and have no taste. The broth has no spice or taste and the dumplings are huge balls of pasta with no taste.

I peeled off all of the pasta and breading and had a bowl of shit I did not want to eat. The Teriyaki Beef however did have taste and was good. Other than that, I would never eat this Saimin again.
